So if I understand what you really want is the VMs to Come along with the Host Machine, then when you add the host to the new cluster and power them up they will be running under the new EVC Mode but you basically bulk moved what you wanted?
If so, I have done what you are describing a bunch of times before (especially when migrating between vCenters and wanting to move the host and all VMs), what I would recommend though is keeping the VMs Powered on. Disconnect the Host, and then remove it from vcenter. Once removed from the Cluster and vCenter connect to it through fat client and power down all the vms. Then Add it back to vCenter, into the cluster you want and power up the VMs and you would have effectively stepped down those VMs in bulk.
Conversely you can power the VMs down and keep track of which ones you want to migrate, put the host in maintenance mode and move it to the cluster you want and then take it out of maintenance mode, cold migrate the VMs and then power them up. I think this option will be a little easier.
However, disconnecting a Host and removing it from vcenter will cause it to take the VMs with it, which sounds like what you want to do....
