essentials is limited to "3 physical machines with 2 processors" each. Your single server cannot exceed 2 processors with an essentials license.
As far as choosing which edition / bundle is a best fit for you, we would need much more detailed information concerning how you arrived at the specific hardware that you are describing. Why one big server, for example, rather than 2 or three smaller servers so that you could have HA and DRS services providing much better flexibility for maintenance and tolerance of faults (the essentialls package then would be a great fit for you). What is the nature and quantity of the work load you are imagining? What is the disk sub-system that you are imagining - will your spindles be able to "keep up" with all of the load that is implied by 512GB of ram and 64 cores?
Designing a system always involves many factors and considerations - and packing everything into one box very seldom is the "best" approach.
